The fine dining scene has expanded in the 2026 edition of the MICHELIN Guide Seoul & Busan, with the city now home to four one-star restaurants following the promotion of a local establishment.

The MICHELIN Guide, which marks its 10th anniversary in Korea this year, announced yesterday at a ceremony at the Signiel Hotel that Busan now has four restaurants holding one MICHELIN star.

The newly promoted restaurant is Le DORER in Marine City, led by chef Kim Chang-uk, bringing the city’s total number of starred restaurants to four.

Le DORER presents a tasting menu that reinterprets traditional Korean cuisine through a contemporary lens, incorporating seasonal local ingredients and subtle influences from French and Japanese culinary techniques. The restaurant also received additional recognition in the guide, with chef Kim awarded the 2026 MICHELIN Young Chef Award.

Three Busan restaurants retained their one-star status for the third consecutive year since the guide’s Busan edition first launched in 2024. These include Mori, Palate, and Fiotto.

Fiotto also maintained its MICHELIN Green Star, an award recognizing restaurants that demonstrate a strong commitment to sustainable gastronomy.

While the overall MICHELIN Guide selection for Seoul and Busan includes 233 restaurants across several categories, Busan’s continued presence in the guide reflects the city’s growing reputation as a culinary destination.

The 2026 edition also saw one restaurant in Korea retain the prestigious three MICHELIN stars.

Chef Kang Min-goo’s Mingles in Seoul kept the top distinction for the second consecutive year, continuing to represent the highest level of recognition in the guide.
