The Michelin Guide has unveiled its 2026 New Selections, spotlighting eight new restaurants across Korea, including three in Busan that reflect the city’s growing culinary sophistication.
The list includes five restaurants in Seoul — Oilje, Sonnet, Mukjeong, Chaconne, and Houget — and three in Busan: Toru, Ultrabite, and Pyongyangjip.
Toru, located in Busanjin-gu, is known for its omakase-style dining that celebrates the day’s freshest seafood. Blending Japanese culinary techniques with local Korean ingredients, the restaurant highlights the changing seasons through delicate, minimalist presentations.
In Suyeong-gu, Ultrabite offers a more modern, experimental approach, where young chefs trained in Australia and Seoul bring global influences to contemporary Korean dining. The result is a menu praised for its creative balance of flavor, texture, and visual appeal.
Completing the trio, Pyongyangjip in Buk-gu honors traditional North Korean flavors with its hand-crafted dumplings and crisp mung bean pancakes. The restaurant’s clear, slow-simmered Yangji shank broth and finely milled batter have earned acclaim for their authenticity and comforting depth.
The addition of these three Busan eateries are welcome additions to the list of Busan’s eateries which began in 2024.
