Park Hyatt Busan’s Dining Room presents an extraordinary culinary experience in collaboration with Nespresso, the official coffee partner of the Michelin Guide Seoul & Busan, and Joseph Lidgerwood, owner and chef of Michelin two-star restaurant EVETT, available from December 12.

This three-brand collaboration, “From Bean to Table: A Taste of Busan,” showcases a creative culinary concept that pairs Nespresso coffee with a six-course menu reimagining the flavors of Busan. Chef Joseph Lidgerwood offers a modern take on traditional Korean cuisine, combining local ingredients with global culinary trends. Each course is thoughtfully prepared to highlight the natural characteristics of the ingredients and reflect the essence of the region.

The menu features “LEAF,” Korean beef sirloin with a subtle hint of angelica; “MULHEO,” a combination of seasonal amberjack, Dokdo shrimp and scallop; “FISH,” featuring tilefish with a hint of refreshing yuzu; “ABALONE,” showcasing the rich umami of pork rice soup; “GALBI,” tender short ribs enhanced with truffle; and “MUSHROOM,” a fusion of shiitake and jujube. The ABALONE, GALBI and MUSHROOM courses are complemented by the aromatic flavors of Nespresso coffee. To elevate the experience, all dishes except MUSHROOM are paired with traditional Korean spirits.  

This exclusive six-course dinner, offering a contemporary interpretation of local culinary heritage, will be available from December 12 to 21 at Dining Room on the 32nd floor of Park Hyatt Busan.

Dinner service is from 5:30 p.m. to 10:00 p.m., priced at KRW 180,000 per person, inclusive of tax.
