Many believe Korean cold noodles are one of the best summer delicacies for coping with the sweltering summer heat. Originally, however, the cold noodle dish was a winter food. That is because buckwheat, the main noodle ingredient, cold radish water kimchi, one of the key ingredients of broth, tastes best in the winter season. Thanks to the invention of the refrigerator, Naegmyeong now has its spot in the summer seasonal menu.
