I'm not a health freak but I am, as you may also be, at least interested in healthier options. This is definitely true when trying to seek alternatives to red meat and processed meats which can pack protein, vitamins and minerals, but aren’t really considered the best for a healthy diet.

In my quest to find another good protein option, I realized that a nutritious alternative to pork or beef would be duck, which is high in protein and iron.

When my family gets together and goes out to eat, Korean spicy duck bulgogi (or Ori-Jumulleok) is our go-to menu item which everyone loves. Reminiscing of our days of getting together over the delicious dish, I decided to try to recreate the meal at home. The result was an ori-Jumulleok tastier and made with more love than we’d had at any restaurant.

Ingredients

• Thinly-sliced duck meat (800g) • 1 cup sliced oyster mushroom (86g), (optional) • 1 cup enoki mushroom (40g), (optional) • 10 cloves garlic sliced (50g) • 1 cup thinly sliced onion (150g) • Thinly sliced chili pepper (80g) • Sliced scallions (80g) • 1 cup perilla leaves • Onion sliced 50g • Garlic chives cut in 2 inches lengths (100 - 150 g) • 3 Tbsp perilla oil (optional) • 1/2 tsp sesame seeds (optional)

Marinade

• 1.5 Tbsp minced garlic • 2 – 3 Tbsp gochujang (red pepper paste) • 3 Tbsp red pepper powder • 2 Tbsp minced onion (optional) • 1 Tbsp ginger powder or minced ginger (optional) • 2 Tbsp brown sugar • 1 Tbsp oyster sauce (optional) • 3 Tbsp dark soy sauce • 3 Tbsp cooking wine (mirin) • Pinch of black pepper

Instructions

1) In a big bowl, mix the duck with crushed garlic, ginger powder, cooking wine, and hot pepper, and marinate while preparing vegetables.

2) Slice the veggies into bite sizes and set them aside.

3) Mix all the sauce ingredients well into a bowl and set it aside.

4) Over medium heat, add duck into a pan and cook until the meat begins to sear. Be careful not to overcook the meat.

5) Remove the pan from the stove and drain all water and oil from the pan.

6) Add the sauce and onions, green onions, sliced garlic, and oyster mushrooms into a pan. Cook until the veggies are slightly softened and not too soggy.

7) Put the perilla oil, garlic chives, enoki mushroom, and sesame leaves 30 seconds before turning off the stove and gently stir them.

8) Sprinkle sesame seed on it. Serve it with a bowl of rice. Bon appetite or 잘 먹겠습니다! (Pronounced: jal meok-ke-sseum-nida)!
