Kimchi, a fermented vegetable dish, is a staple dish in South Korea. There are hundreds of varieties available, but the one that Americans are most familiar with is made from salted napa cabbage and spices. Kimchi is often mixed with other vegetables like radish, onion and garlic.

Before winter, many Koreans do Kimjang, the process to make a lot of kimchi with family members or their friends. After kimjang is done, Koreans share the kimchi with neighbors and relatives.
